About the coffee

Diana Sambony chose to grow the Pink Bourbon variety not only for its exceptional quality, but also for its value in the market. This choice is the result of a thoughtful decision that combines a passion for coffee with economic sustainability.

Process: washed
After harvesting the ripe coffee cherries, all impurities are removed from the coffee on the farm before processing by floating in plastic tanks. The coffee is then fermented for 48 hours in the cherries and for a further 48 hours in the pulp after peeling. Both fermentations took place in closed plastic bags, i.e. anaerobically. The pulp was then removed from the beans and the beans went to the drying areas of the farm where they were slowly dried for 8 days.
