Finca Consolapan is a family-owned farm that has been dedicated to coffee cultivation since the 1930s. It was our great-aunts who first began growing coffee, and over the years we moved from simply selling coffee cherries to processing parchment and green coffee. We soon recognized the high-quality potential of our coffee, and in the last ten years we have focused on refining our processes to offer a product that meets the needs of our customers.

 

Our farm is located in an environment typical of tropical cloud forests, with rich vegetation and a diverse canopy reaching up to 25 meters in height. It also serves as a natural water reservoir, feeding the Consolapan River on the northeastern side, along the road from Xalapa to Coatepec.

 

Finca Consolapan employs ten permanent workers and hires up to fifty seasonal workers during harvest. We provide opportunities for women, strictly prohibit child labor, and prioritize hiring local people.

About the coffee

Despite ongoing urbanization, rising land value, and the uncertainties of the coffee market, we have chosen not only to protect but also to improve conditions on our farm.We have implemented sustainable farming practices that allow us to achieve high productivity without negative impacts on the environment. Our workers receive training and benefit from the guidance of technical specialists.

Looking ahead, Finca Consolapan aims to join a network of sustainable farms in order to continue cultivating coffee in line with sustainability principles, while preserving our family tradition.

At the farm, the Typica, Caturra, and Marsellesa varieties are processed using the washed method. Ripe cherries are first sorted through floating. They are then depulped and fermented in plastic tanks. After fermentation, the beans are thoroughly washed, dried on screens in solar dryers, and finally rested in their parchment layer to stabilize quality.
